The Royal Mail Hotel Restaurant
|
Dan Hunter joined the Royal Mail Hotel as Executive Chef in 2007. His previous position was the head chef at Mugaritz in Spain, which was named as the tenth best restaurant in the world by Restaurant Magazine (U.K.) during his time in charge.
"When considering an overall philosophy behind the food style and menu design at the Royal Mail, several key factors come to mind: seasonality; location; purity of flavour; and the use of technology to treat and present food in new and sometimes challenging textures and combinations of flavours."
Dan Hunter
"The Royal Mail is not only special, but unique. Only a truly imaginative chef could produce this food, which is not to suggest creativity usurps sense or style ... we have a new culinary star in the firmament."
Australian Gourmet Traveller, 2008
Dan's cuisine is complemented by The Royal Hotel's multiple award winning 8,000 bottle wine cellar.

About Royal Mail Hotel
|
|
Dunkeld's historic Royal Mail Hotel and the neighbouring Mt Sturgeon Estate are unique rural destinations. Set among native gardens and fruit orchards, it is idyllically located at the base of Mount Sturgeon, at the southern tip of western Victoria's Grampians Ranges.
Originally established in 1855, the hotel retains its historical charm while providing guests with contemporary, architecturally designed facilities that take advantage of the stunning natural surroundings. As John Lethlean, from the Australian Gourmet Traveller wrote: "The Royal Mail Hotel could well be Australia's most exciting regional restaurant. Book a room, it's well worth the trip". |
|
| Getting There |
|
Dunkeld is approximately three hours' drive from Melbourne. If driving, follow the Western Highway through Ballarat and take the Glenelg Highway (B160) towards Dunkeld. This will take you straight to the hotel door.
V/Line offers daily transport of both rail direct and train/coach changeover services to the Grampians Region out of the Melbourne CBD at Spencer Street Station. Daily coach services are also available from Melbourne. |
