Knife Skills

One skill that marks good cooks and chefs from the average Joe is the way they use their knives. The speed, the precision, and the sheer dexterity of a competent knife handler are a joy to watch. But proper slicing is much more than showmanship: it enhances the presentation and improves the flavour and texture of your dishes.

This one day course involves both demonstration and practice, and focuses on the correct selection and usage of knives. You'll learn the skills of filleting, de-boning, vegetable cutting, carving, and knife art, as well as how to sharpen and preserve your knives through proper handling and care.

Once you acquire these skills, cutting will become a part of the pleasure of cooking. The course includes a light lunch and a glass of wine.

This experience consists of one session from 9.30 am to 3.30 pm.
Numbers
This package is for one person to participate in a class of up to 12 people.
Availability
This experience runs roughly 6 or 7 times per semester on Saturdays or Sundays. Please contact William Angliss directly on (03) 9606 2111 for course dates and availability, and book early to avoid disappointment.
Requirements and restrictions
Anyone aged 15 years or older can enroll in this class (wine can only be served to those aged 18 years or older).
What we provide
All ingredients and equipment (including knives), a light lunch and a glass of wine.
What you need to bring / provide
Due to occupational health and safety factors and the comfort of course participants, it is recommended that soft soled flat shoes be worn to all cooking courses.

You're welcome to bring your own set of knives with you to the class if you'd prefer to use them.

Getting There
We're located on the corner of King and Latrobe Streets in the Melbourne CBD, a few minutes walk from Flagstaff Station.

There are several car parks in the surrounding area. Short-term street parking in nearby streets during the day and ample street parking of an evening is available. Flagstaff Station is a 5-minute walk from the Institute. William Angliss is serviced by a regular tram route along La Trobe Street.
